Cooking with kala namak

Use kala namak for a savoury, egg-like note in tofu scramble, chaat or chutney. Start with a pinch, mix it through and taste before adding more.

For tofu scramble, add a little near the end of cooking and taste before serving. For chaat or chutney, mix in a small amount at the seasoning stage, following your recipe. Kala namak adds flavour; it does not provide the binding or structure of eggs.
